Smoked Salmon & Potato Gratin

Simple to put together, this easy recipe for baked salmon uses hot smoked salmon, potatoes, cream and garlic to create a healthy, satisfying one pot meal that's perfect comfort food.

Ingredients - serves 4 -6

2lb/1kg main crop potatoes such as King Edward or Maris Piper

2 garlic cloves, crushed

8oz/250g hot smoked salmon,flaked

½/250ml pint full cream milk

½/250ml double cream

1 teasp grain mustard

2oz/50g butter

Salt & Pepper to taste

Fresh grated nutmeg



Method

Preheat the oven to 150C/gas mark 2. Peel the potatoes and slice very thinly, dry with a cloth and use half of them to cover a well buttered baking dish and season Sprinkle over 1 crushed garlic clove and the hot smoked salmon. Cover with the rest of the potatoes and the garlic and season again Mix the milk and cream together with the mustard and pour over the potatoes. Grate some nutmeg over the top and dot with butter. Bake for 1½ hours or until the potatoes are tender and the gratin is golden brown and bubbling.



Serve with either a green salad or broccoli and a nice cold glass of sauvignon for the adults.
